What I Eat in a Day

Hey Friends!

I love sharing fitness tips with you, and an important part of fitness is also your diet. While I love a good dessert or fast food run here and there, it is super important to take care of your body and fill it with good nutrients. Check out these recipes to see what I eat in a day. These are my go-to picks for breakfast, lunch, and dinner. They are super easy to make and are a great healthy option for cooking at home!

Breakfast: I love starting my morning by making banana pancakes at home. Banana pancakes are a perfect way to use up any old bananas that might be lying around your kitchen, AND its healthy with no flour. BOOM 

For this recipe, you will need one banana, big scoop of almond butter and two eggs (this makes about 10-12 pancakes)

Combine banana mashed up, almond butter and eggs. Stir until banana is smooth and consistent with the eggs. Oil a griddle or frying pan over a medium high heat and pour the batter onto the pan. Cook until the pancakes are a golden brown on both sides and enjoy! I love to top these with berries and a little honey. 

Lunch: For lunch, a chicken salad sandwich on Ezekiel bread is always a favorite of mine. This sprouted bread is a healthier choice and makes for a great sandwich.

For the chicken salad, I love making my own chicken salad at home. All you need is chicken breast, celery, grapes, sprouts, mayonnaise (which I use Veganaise/vegan version of mayo), salt, and pepper. First, chop up the chicken, celery, and grapes. Mix these items with the mayonnaise, salt, and pepper into a bowl. Then, scoop the chicken salad on to your bread and top with sprouts! YUM 

Dinner: Chicken tacos are a great meal to end the day. Packed with protein, these are super filling and keep you full for the rest of the night.

Begin by combining chicken, lemon, olive oil in a large pan over a medium heat. You can then add seasoning with garlic powder, onion powder, and bay leaf. Cook until the chicken is no longer pink.

Once the chicken is cooked, you can place the chicken in a soft or hard taco shell based on your preference. Then place lettuce, tomatoes, cheese, salsa, sour cream, and guacamole on top! Let me know your favorite meals to cook at home!
